While zucchini is still available at the grocery store, I highly recommend making Fried Zucchini Spaghetti. Yes the zucchini is fried, but not unhealthy deep fried....just enough to make the zucchini crispy. I halved the recipe, but by the end of dinner I wish I hadn't because Justin and I wanted more!
